How to Make Ajlouk Qura’a

Ajlouk Qura’a is one of the best dishes in Tunisia, particularly among the French Jewish community. It is a salad made from various ingredients, including red peppers, zucchini, olive oil, garlic, harissa, and spice mix. So, let us now give you the list of ingredients and the instructions to make Ajlouk Qura’a.


  • One to two pounds of zucchini – cut it into one-inch-thick slices
  • One tablespoon of fresh lemon juice
  • One tablespoon of extra virgin olive oil
  • A half teaspoon of salt
  • A half teaspoon of caraway seeds
  • A half teaspoon of ground coriander
  • A half teaspoon of harissa
  • One clove of crushed garlic
  • ¼ cup of crumbled feta cheese


  1. Use a large saucepan to place the zucchini
  2. Cover with water to one inch above the zucchini
  3. Bring to a boil and cook for 25-30 minutes
  4. The purpose is to make zucchini tenderers
  5. Mash zucchini with a fork
  6. Now combine juice and the other six ingredients in a bowl
  7. Stir these ingredients with a whisk
  8. Add zucchini and toss well
  9. Use cheese for sprinkling
