How to Make Merguez

Ingredients
- One pound of sausages
- A half teaspoon of cumin seeds
- A half teaspoon of fennel seeds
- A half teaspoon of coriander seeds
- One pound of ground lamb
- Two tablespoons of finely chopped cilantro
- Two cloves of minced garlic
- One or two teaspoons of kosher salt
- One teaspoon of paprika
- A half teaspoon of cayenne pepper – this is optional
- Olive oil for cooking
- And harissa for serving – this is optional
- One teaspoon of paprika
Instructions
- Toast coriander, cumin, and fennel seeds in a small skillet
- Set the temperature to medium-low heat
- Toasting should be no more than 1-2 minutes
- Transfer warm spices to the grinder and mix well
- You can also use mortar and pestle
- Now combine all ingredients in a large bowl
- Create lamb mixture into one-inch thick and five-inch-long cigars
- You can also make cylindrical or patty shapes
- Use oil to brush sausages and grill them until a brown texture is achieved
- Serve with more harissa and cilantro on the side
