How To Make Fricassee

Chicken Fricassee is a traditional French-Tunisian dish made of chicken stew with golden-brown chicken pieces with white mushroom sauce to create a creamy texture. It is one of the best family meals in Tunisia and other Middle Eastern countries. Let us tell how to make Chicken Fricassee.

Ingredients

  • For the chicken, you will need the following ingredients
    • Four chicken drumsticks
    • Four chicken thighs
    • One teaspoon of salt
    • A half teaspoon of black pepper
    • Four tablespoons of unsalted butter
  • For stew, you will need the following ingredients
    • 300 grams of white mushrooms
    • Two medium brown onions
    • Two cloves of finely minced garlic
    • One bay leaf
    • Three thyme sprigs
    • Three tablespoons of flour
    • A half cup of chicken stock
    • ¼ teaspoon of salt
    • ¼ teaspoon of black pepper
    • ¼ teaspoon of salt
    • ¼ teaspoon of black pepper
    • Two tablespoons of chopped parsley
    • 2/3 cup of heavy cream

Instructions

  1. Use paper towels to pat the chicken dry and sprinkle it with salt and pepper
  2. Melt butter over medium heat in a pot with a lid or a large skillet
  3. Add chicken thighs and cook for 5-8 minutes
  4. Turn and cook the other side for one to two minutes
  5. Brown drumsticks for 2-3 minutes and remove from the skillet
  6. Cook mushrooms and onions and stir garlic and flour for 30 seconds
  7. Add wine and chicken stock and stir in the pot to dissolve residues
  8. Now, return the chicken to the sauce
  9. Cover it and simmer for 10-20 minutes
  10. Uncover after 20 minutes and simmer for another 20 minutes
  11. Remove the chicken and place it in a place
  12. Add cream and stir again
  13. Adjust the taste by adding some salt
  14. Return chicken to the sauce and remove the stove
  15. Sprinkle with parsley and serve it with mashed potato and rice
