How to Make Mechouia Salad


Mechouia salad is one of the best-grilled salads eaten by everyone in Tunisia. It contains tomatoes, red peppers, olive oil, herbs, and garlic. The unique thing about this salad is that you can make it without hassle. So, without further ado, let us make Mechouia salad. Read on!


  • Two or three pounds of bell pepper
  • Two large plum tomatoes
  • A half eggplant – this is optional
  • Two tablespoons of olive oil
  • One chili pepper
  • One sweet pepper
  • One medium-sized onion
  • Two cloves of garlic
  • Half lemon – juiced
  • Salt and pepper to taste


  1. Start the process by chopping the veggies
  2. Apply some oil to the grill
  3. Now grill tomatoes, bell pepper, and eggplant
  4. You can use a nonstick pan if the grill is not available
  5. Peel the grilled vegetables after they are cool
  6. Mash the chili pepper, sweet pepper, onion, and garlic
  7. Now add the mixture to the grilled eggplant
  8. Mash again for a few minutes
  9. Mash tomatoes on a separate plate
  10. Add the mashed tomatoes to a medium-sized bowl with veggies and a mixture
  11. Add lemon juice, olive oil, and spices
  12. Use capers and olives for garnishing
  13. Service hot to your family or friends

Note: If you want a perfect and authentic texture, we recommend mashing the veggies with your hand. A food processor is not good because it will cause runny veggies. Thus, you won’t achieve authentic consistency.
