How To Make Fricassee
Chicken Fricassee is a traditional French-Tunisian dish made of chicken stew with golden-brown chicken pieces with white mushroom sauce to create a creamy texture. It is one of the best family meals in Tunisia and other Middle Eastern countries. Let us tell how to make Chicken Fricassee.
Ingredients
- For the chicken, you will need the following ingredients
- Four chicken drumsticks
- Four chicken thighs
- One teaspoon of salt
- A half teaspoon of black pepper
- Four tablespoons of unsalted butter
- For stew, you will need the following ingredients
- 300 grams of white mushrooms
- Two medium brown onions
- Two cloves of finely minced garlic
- One bay leaf
- Three thyme sprigs
- Three tablespoons of flour
- A half cup of chicken stock
- ¼ teaspoon of salt
- ¼ teaspoon of black pepper
- ¼ teaspoon of salt
- ¼ teaspoon of black pepper
- Two tablespoons of chopped parsley
- 2/3 cup of heavy cream
Instructions
- Use paper towels to pat the chicken dry and sprinkle it with salt and pepper
- Melt butter over medium heat in a pot with a lid or a large skillet
- Add chicken thighs and cook for 5-8 minutes
- Turn and cook the other side for one to two minutes
- Brown drumsticks for 2-3 minutes and remove from the skillet
- Cook mushrooms and onions and stir garlic and flour for 30 seconds
- Add wine and chicken stock and stir in the pot to dissolve residues
- Now, return the chicken to the sauce
- Cover it and simmer for 10-20 minutes
- Uncover after 20 minutes and simmer for another 20 minutes
- Remove the chicken and place it in a place
- Add cream and stir again
- Adjust the taste by adding some salt
- Return chicken to the sauce and remove the stove
- Sprinkle with parsley and serve it with mashed potato and rice
