How To Make Makroudh
Makroudh is a traditional Tunisian semolina pastry. It means “diamond shape” in Arabic because these are small delights enjoyed throughout the North African region. It has also become popular in Malta and Turkey. Today’s article will list ingredients and instructions to make Makroudh. Read on!
Ingredients
- Four cups of semolina flour
- A half cup of vegetable oil
- A half cup of unsalted butter
- 1/3 cup of warm water
- One pinch of salt
- One tablespoon of orange flower water
- Four tablespoons of all-purpose flour
- Two teaspoons of vanilla sugar
For the filling, you will need the following ingredients
- Four cups of finely ground almonds
- One or two cups of white sugar
- One tablespoon of vanilla sugar
- Two pinches of ground cinnamon
- One dash of almond extract
For the syrup, you will need these ingredients
- One 12-ounce jar of honey
- Three tablespoons of orange flower water
- Two cups of oil for frying
- Three tablespoons of sesame seeds for garnishing
Instructions
- Mix semolina, butter, oil, and salt in a large bowl
- Rub semolina grains between your fingers
- Use a kitchen towel to cover it and set aside
- Combine orange blossom water and warm water to make the Makroudh
- Gently add the mixture to the semolina with flour and vanilla sugar
- Snead ingredients to make a soft dough
- Add liquid for the softer and smoother dough
- Now, combine ground almonds, vanilla sugar, cinnamon, and almond extract in a bowl
- The purpose is to make the filling
- Roll the mixture into two long logs
- Set aside these logs
- Divide semolina dough into two balls
- Flatten the dough to make a rectangular shape
- Press down in the rectangle’s center with your finger
- The purpose is to make an indentation
- Add filling logs and seal the rectangle
- Now cut each log into diagonal parts or pieces
- Reshape the cuts to achieve a uniform shape
- Heat olive oil in a saucepan
- Combine orange flower water and honey in the saucepan to make the syrup
- Heat over medium-low heat and keep warm
- Deep fry Makroudh in small batches for five minutes
- Dip friend Makroudh into the honey syrup for one minute
- Remove the Makroudh and drain on wire racks
- Repeat the process until you are done
- Sprinkle with sesame seeds (optional)
- Serve the delicious Makroudh
