Ingredients
- One whole chicken cut into four pieces
- One onion cut into four wedges
- Three to four cardamom pods
- One or two liters of water
- Six cups of freshly cut Mulukhiyah leaves
- Eight to ten crushed garlic cloves
- Two tablespoons of olive oil
- One teaspoon of allspice
- Salt to taste
- Fresh lemon juice
Instructions
- Use a medium or large pot to place the chicken
- Add cardamom pods and onion wedges to the pot
- Bring the pot to a boil and cook over medium heat
- Reduce the heat to ensure simmering
- After cooking the chicken, take it out and set it aside for a few minutes
- Cut the chicken into pieces and remove the bones
- Set aside the cut chicken and place it back over the stock
- You can toss cardamom pods and onions at this stage
- Next, add Mulukhiyah over the chicken and stock
- Stir the ingredients well and cook on a high heat
- Reduce the heat to medium-low once it starts boiling
- Set aside the simmered mixture for 30 minutes
- Add salt and allspices at this point
- Use a skillet to place ghee or olive oil
- Add crushed garlic to the olive oil and cook for a few minutes
- Add this mixture to Mulukhiyah and stir appropriately
- Add a little more soup or broth if you want to make Mulukhiyah soupier
- Serve the delicious dish with rice and lemon juice on the side
